Pork Shank with Apple Citrus Rice Salad

INGREDIENTS

Pork Shank

Serves 8

  • Pork shank
  • ½ lemon
  • ½ tsp salt
  • 3 spoons vegetable oil
  • 3 spoons fruit chutney
  • 10g dill
  • 5g coriander
  • Grind pepper
  • 1 Tsp BBQ spice
  • 1Tsp paprika
  • 5g thyme

Apple citrus rice salad

Serves 4

  • ½ cup white rice
  • Pinch salt1 apple cubed
  • ½ pineapple cubed. (1 slice cut out separately for later use.)
  • ½ cucumber cubed
  • 10g mini rocket veggies
  • 15g olive oil
  • ½ lemon

Method:

Shank

1. Using a sharp knife, score pork shank into even sizes all around to release excess fat.

2. In a bowl, squeeze in the lemon juice and add oil and chutney.

3. Finely chop the dill and coriander and incorporate into the mixture. Then finally stir in the remaining ingredients.

4. Rub this mixture into the pork shank and inside at every part of reach.

5. Tightly cover with foil and leave to rest for 1 hour in the fridge.

6. Roast in the oven for 1hour and 30 minutes.

Rice

1. Put rice, and lemon in a salted boiling water to cook rice.

2. When rice is cooked, remove lemon and leave rice to cool.

3. Cut the pineapple into even cubes, together with cucumber and apple. Stir into the rice with a drizzle of olive oil.

4. Add in mini rocket veggies and serve in a plate as desired.

5. Grill the remaining pineapple for a few minutes until nicely charred.

6. Use the pineapple as topping and garnish for rice.
