Frikkadels on toast with zesty mashed butter beans

Preparation: 1 Min | Cooking: 15 Min | Serves 3-4

Ingredients        

350g Eskort Traditional Mini Frikkadels

olive oil for cooking

3-4 slices bread

410g (1 can) butter beans

60ml (¼ C) plain yoghurt

zest of 1 lemon

salt and freshly ground pepper

3-4 eggs, poached               

Method

  • Preheat the oven to 180°C.
  • Place the frikkadels on a baking sheet, drizzle with olive oil and bake for 10 minutes or until done.
  • Toast the bread as preferred. (I like mine golden and crispy on the crust but still soft in the middle.
  • Drain, then mash the butter beans with a fork. Add the lemon zest and yoghurt and mix well.
  • Season with the salt and pepper.
  • Serve the butter beans on toast and top with frikkadels and poached eggs.

Butternut soup with mini Frikkadels

Preparation: 5 Min | Cooking: 10 Min | Serves 4

Ingredients

Eskort Traditional Mini Frikkadels

1L store-bought butternut soup

250ml (1c) butternut, peeled, cubed and roasted

45ml (3T) olive oil

Method

  • Fry the frikkadels in olive oil in a frying pan over moderate heat.
  • Heat the butternut soup according to the packet instructions
  • Serve the soup with the frikkadels and roasted butternut and garnish with veggie chips (if available).

Mini Frikkadel gluten-free Pizza

Preparation: 10 Min | Cooking: 15 Min | Serves 2

Ingredients

350g Eskort Traditional Mini Frikkadels

Base

125ml flaxseed flour

125ml buckwheat flour

2,5ml (½t)  salt

5ml (1t) xantham gum

5ml (1t) baking powder

125ml (½c) water

60ml (¼c) buckwheat flour for rolling out dough

60ml (¼c) tomato purée

Topping

250ml (1c) mozzarella cheese, grated

60ml (¼c) green olives, pips removed

2 shallots, peeled and quartered

60ml (¼c) tomato purée

Method

  • Preheat the oven to 200°C.
  • Base In a large bowl, add the flaxseed and buckwheat flour, xantham gum, salt and baking powder.
  • Add the water and mix to form a firm dough.
  • Roll the dough out with the ¼c buckwheat flour and place the base on a baking sheet.
  • Topping Cover the base with the tomato purée and bake for 7 minutes.
  • Add the mini frikkadels, mozzarella, green olives and shallots and bake for another 7 minutes.
  • Serve the pizza hot.

Mini Frikkadel and Mixed Veggie Pasta

Serves 6 |Preparation: 15 Min | Cooking: 30 Min

Ingredients

350g Eskort Traditional Mini Frikkadels

300g bowtie pasta

410g (1 can) tomato purée

500ml (2c) boiling water

5 tomatoes, quartered

500ml (2c) butternut, peeled and cubed

5 shallots, peeled and halved

5ml (1t) crushed garlic

salt and freshly ground pepper

yoghurt or sour cream for serving

Method

  • Preheat the oven to 210°C.
  • Bake the frikkadels in a roasting pan for 5 minutes.
  • Add the rest of the ingredients to a deep casserole dish and bake for 20 minutes.
  • Add the frikkadels to the sauce, season with salt and pepper and bake another 5 minutes.
  • Serve the pasta with yoghurt or sour cream.

Mini Frikkadel and Mixed Veggie Pasta

Preparation: 15 Min | Cooking: 30 Min | Serves 6

Ingredients        

350g Eskort Traditional Mini Frikkadels

BBQ Frikkadel Subs

Preparation: 5 Min | Cooking: 15 Min | Serves 4

Ingredients

350g Eskort Traditional Mini Frikkadels

30ml (2T) olive oil

BBQ sauce

4 hot dog rolls

250ml (1c) mozzarella cheese

60ml (¼c) spring onions, chopped

125ml (½c) jalapeño atchar

125ml (½c) plain yoghurt

30ml (2 T) red pepper pesto

Method

  • Preheat the oven to 190°C.
  • Fry the frikkadels in olive oil in a frying pan over moderate heat. Baste with the BBQ sauce until done.
  • Add the frikkadels to the rolls with the mozzarella and bake for 10 minutes.
  • Serve the subs with chopped spring onion, jalapeño atchar and a mixture of the plain yoghurt and red pepper pesto.
