Bacon, cheese & cauliflower muffins

These yummy bacon muffins can be enjoyed fresh out of the oven with butter and pesto or as a #JustDelicious hot breakfast-on-the-go! 

Ingredients

500g Eskort Diced Bacon

500ml (2c) cauliflower, roughly chopped

60ml (¼c) chives, chopped

250ml (1c) Grana Padano cheese

750ml (3c) cake flour

10ml (2t) baking powder

5ml (1t) salt

125ml (½c) butter

3 eggs

500ml (2c) milk

45ml (3T) butter

45ml (3T) basil pesto

Method

  • Preheat the oven to 180°C.
  • Fry the bacon in a pan over a high heat until crispy.
  • Add the rest of the ingredients to a large mixing bowl and mix until well combined.
  • Grease an 8-hollow muffin pan with nonstick spray and evenly divide the batter between the hollows.
  • Bake for 20 minutes or until the muffins are cooked and golden. Set aside to cool slightly.
  • Slice the muffins in half, spread with butter and serve topped with basil pesto.
