Bacon cheeseburger meatballs

Cheeseburgers! Just smaller, tastier and oh so moreish! Mini, melty meatballs that taste like cheeseburgers – are you drooling yet?

Ingredients

1 packet Eskort Streaky Bacon

1 box Eskort Mini Frikkadels

10ml (2t) butter

olive oil

1 garlic clove, crushed

½ onion, finely diced

1 can (410g) chopped tomatoes

200g cheddar cheese, thinly sliced into squares

lettuce

15 baby tomatoes CHECK QUANTITY PLEASE

2,5ml (½t) chilli flakes

12-16 short wooden skewers

Method

  • Heat the butter in a pan and fry the bacon until done as preferred (we like it crispy!).
  • Remove from the pan, cut into 3cm pieces and set aside.
  • In the same pan with the bacon drippings, fry the frikkadels until heated and cooked through. Remove from the pan and set aside.
  • Fry the garlic and onion in the pan until softened. Add the chopped tomatoes and chilli flakes and simmer until the sauce has thickened.
  • Remove the pan from the heat and set aside.
  • Thread a frikkadel onto a wooden skewer, followed by a square of cheddar cheese, a piece of bacon, some lettuce and a baby tomato.
  • Repeat this until all the ingredients have been used.
  • Pour the sauce into a dipping bowl and serve with the meatballs.
