Breakfast Broth with Poached Eggs & Pulled Pork

Breakfast Broth with Poached Eggs & Pulled PorkWarm up with a hearty bowl of breakfast broth packed with everything you need to start your day!


Breakfast Broth 

  • 500 g jam tomatoes, halved 
  • 250ml (1c) water 
  • 60ml (¼c) red wine vinegar 
  • 125ml (½c) sundried tomatoes 
  • 5ml (1t) salt and freshly ground pepper 
  • 250ml (1c) fresh basil, chopped 
  • 250ml (1c) chives, chopped  

Poached Eggs & Pulled

  • PORK500g Eskort Smoked Pulled Pork
  • 4 eggs, poached 
  • 125ml (½c) mixed seeds, toasted
  • 5ml (1t) salt and freshly ground pepper  


  • Preheat the oven to 200°C.
  • Breakfast broth Arrange the jam tomatoes on a baking sheet and bake for 15 minutes. 
  • Place the water, red wine vinegar, sundried tomatoes, salt and pepper in a medium-sized pot. Bring to the boil then stir in the roasted tomatoes.
  • Boil for a further 10 minutes, then strain the broth through a sieve into a large bowl.
  • Pour the strained broth back into the pot, lower the heat to keep warm.
  • Poached eggs and pulled pork In a pan over medium heat, fry the pulled pork until evenly heated and set aside. 
  • Ladle the hot broth into bowls and add basil and chives. Place a poached egg and a serving of pulled pork into the broth and serve sprinkled with toasted mixed seeds.
