Cauliflower steaks with cheese dip & crispy bacon

Preparation: 20 min | Cooking: 20 min | Serves 4

Cauliflower sliced into steaks, seasoned and drizzled with olive oil, lemon juice and zest, then baked until golden brown and tender. Each steak is covered with a #JustDelicious chilli and garlic cheese sauce, topped with crispy BBQ bacon rashers and garnished with fresh basil and chives.


Cheese dip

60ml (¼c) butter

60ml (¼c) olive oil

1 onion, chopped

2 garlic cloves, sliced

1 red chilli, chopped

20ml (4t) chopped fresh sage

20ml (4t) chopped fresh thyme

125ml (½c) flour

750ml (3c) milk

125ml (½c) Parmesan cheese

125ml (½c) white cheddar cheese


200g Eskort Rindless Streaky Bacon

15ml (1T) Eskort Braai Spice (BBQ Spice)

30ml (2T) olive oil

Cauliflower steaks

2 large heads cauliflower

60ml (¼c) olive oil

zest and juice of 1 lemon

salt and freshly ground pepper

To serve

handful fresh basil

60ml (¼c) chives


Cheese dip

  • Add the butter and olive oil to a saucepan over medium to high heat.
  • Fry the onion, garlic, chilli, sage and thyme until the onion is soft.
  • Whisk the flour and milk together then add slowly to the saucepan while stirring.
  • Reduce the heat and add the cheeses.
  • Simmer until the cheese has melted and season with salt and pepper


  • Preheat the oven to 190°C.
  • Place the bacon on a baking sheet lined with baking paper, drizzle with olive oil and season with BBQ spice.
  • Bake for 10-15 minutes until the fat has rendered and the bacon is crispy.

Cauliflower steaks Slice the cauliflower into large slices.

  • Place the cauliflower on a baking sheet and drizzle with olive oil.
  • Sprinkle with the lemon zest and juice and season with salt and pepper.
  • Bake for 20 minutes until golden but still tender.

To serve

  • Spoon generous amounts of cheese sauce over the cauliflower and add bacon. Finish with the basil and chives
