Cheesy Egg Toasty

This #JustDelicious cheesy toasty breakfast will go down an absolute treat with the whole family.


1 packet Eskort Back Bacon

20g butter

4 slices bread of your choice

4 eggs

60g (¼c) Parmesan cheese, grated

salt and ground black pepper

chopped chives to garnish


  • Heat the butter in a frying pan and fry the bacon both sides until cooked.
  • Remove the bacon from the pan, cool and cut into pieces.
  • Transfer the bacon and butter juices to a small bowl.
  • Using a cookie cutter (or a mug or cup), cut out the centre of each slice of bread.
  • Spread the bread slices both sides with the bacon and butter juices.
  • Reheat the pan and add a slice of bread. Fry until browned then turn over to cook the other side.
  • Crack an egg into the middle of the bread, season with salt and pepper and a sprinkling of Parmesan cheese.
  • Cover the pan and let the egg to cook through.
  • Remove from the pan, set aside and keep warm.
  • Repeat with the remaining slices of bread.
  • Serve the toast slices topped with a sprinkling of the bacon, Parmesan and chives.
