Cheesy lunch to share

Spicy tomato relish

120g cherry tomatoes

olive oil for cooking

1 red chilli, chopped

125ml (½c) apricot jam

45ml (3T) vinegar

Cheese sauce

250ml (1c) cheddar cheese, cut into blocks

250ml (1c) milk

5ml (1t) white pepper

Hot dogs

4 Eskort Cheese Grillers

olive oil for frying

50g (1/5c) leeks

125ml (½c) flour

2 hot dog rolls

30ml (2T) butter

10ml (2t) salt

handful rocket


Spicy tomato relish

  • In a saucepan over medium heat, fry the tomatoes in olive oil until the skins start to burst.
  • Add the chilli, jam and vinegar to the saucepan and simmer until tomatoes are soft. Remove from the heat and set aside

Cheese sauce

  • In a saucepan over medium heat, add the cheese, milk and white pepper and stir the sauce until the cheese has melted and a smooth sauce forms. Do not boil.

Hot dogs

  • Fry the cheese grillers in olive oil in a pan until golden.
  • Dust the leeks with the flour and set aside to rest for two minutes.
  • Add some oil to a shallow saucepan and fry the leeks until golden and crispy.
  • Season with salt.
  • Butter the hot dog rolls then toast in a hot frying pan.
  • Top the toasted rolls with a generous amount of fresh rocket. Add the spicy tomatoes, cheese grillers and leeks.
  • Drizzle with cheese sauce and serve.
