Christmas spiced donuts with brandy glaze

Ingredients

Brandy glaze

500ml (2c) icing sugar

65ml (¼c) brandy

250ml (1c) water

Royal icing

1 egg white

500ml (2c) icing sugar

3ml (½t) vanilla

Donut dough

250ml (1c) Eskort Smoked Pork Neck Steaks, dice

20g (4t) dry yeast

125ml (½c) warm water

750ml (3c) flour

125ml (½c) castor sugar

5ml (1t) salt

125ml (½c) butter

125ml (½c) buttermilk

5ml (1t) vanilla essence

5ml (1t) nutmeg

5ml (1t) cinnamon

5ml (1t) cloves

3 eggs

65ml (¼c) ginger

65ml (¼c) raisins

65ml (¼c) glazed cherries

oil for deep-frying

 

Method

Brandy glaze

  • Mix the icing sugar, brandy and water in a mixing bowl to form the glaze.

Royal icing

  • In a large mixing bowl, using an electric beater, whisk the egg white, icing sugar and vanilla until white and thick.

Donut dough

  • Add the yeast to the warm water and set aside to bloom, 5-10 minutes.
  • Place the flour, castor sugar and salt in a mixing bowl.
  • In a saucepan over medium heat combine the butter, buttermilk and vanilla essence. Add the nutmeg, cinnamon and cloves. Remove from the heat once the butter has melted and keep aside.
  • Combine the yeast and spiced buttermilk mixture.
  • Make a well in the middle of the flour mixture, break the eggs into the well and cover lightly with flour.
  • Grate the ginger and squeeze the liquid from it. Add the ginger liquid, raisins and cherries to the flour mixture.
  • Combine the buttermilk and flour mixtures, stirring until a dough starts to form.
  • Place the dough on a lightly floured surface, knead for 10 minutes and shape into 12 equal-sized balls.
  • Shape each ball into a donut by making a hole in the middle with your thumbs.
  • Place the shaped donuts on oiled baking paper and cover with clingwrap. Rest for 10-15 minutes in a warm space.
  • Deep-fry the donuts until golden and crispy.
  • Dip the donuts in the brandy glaze then place remove to a cooling rack for the glaze to partially set.
  • Dip the glazed donuts in the royal icing.
  • Garnish with more glazed cherries.
