Crispy fried potatoes with smoked pulled pork spice

Ingredients

Pulled pork spice

500g Eskort Smoked Pulled Pork

45ml (3T) olive oil

45ml (3T) thyme, chopped5ml (1t) smoked paprika5ml (1t) ground cumin5ml (1t) ground dry gingerzest of 1 lemon

Crispy fried potatoes

oil for deep frying6 large potatoes, unpeeled, halved and boiled15ml (1T) salt 

Method

Smoked pulled pork spice

  • Fry the pulled pork in the olive oil for 10 minutes over moderate heat until crispy and cooked dry.
  • Stir in the thyme and spices, then remove the pan from the heat.

Crispy fried potatoes

  • Place a pot of oil over high heat.
  • While the oil heats, use a tea towel to dry the boiled potatoes then add to the hot oil.
  • Deep fry the potato halves until golden brown and crispy.
  • Serve the hot potatoes seasoned with salt and the pork spice.
