Preparation: 20 Min | Cooking: 45 Min | Serves 6

Bread nests

1kg store-bought bread dough

125ml (½c) butter

125ml (½c) castor sugar

5ml (1t) vanilla essence

6 Easter eggs

1 egg for glazing

125ml (½c) flour for dusting

Candied bacon

200g Eskort Rindless Streaky Bacon

60ml (¼c) castor sugar

100g white chocolate

100g dark/milk chocolate

Nest breads

  • Preheat the oven to 180°C.
  • Roll the dough out on a lightly floured surface into a square form about 1 cm thick.
  • In a small mixing bowl, mix the butter, castor sugar and vanilla together until a paste forms.
  • Cover the dough with the paste and carefully lifting the edge of one side, fold the dough over once to create a rectangular form.
  • Slice the dough lengthwise to create six equally-sized strips.
  • Loosely twist each strip and then loop the twist into a circle to create a nest, tucking the ends underneath.
  • Place the nests on a greased baking sheet.
  • Beat the egg and use a pastry brush to glaze each nest.
  • Loosely cover the nests with clingwrap and set aside until risen to double in size.
  • When the nests are ready, place an Easter egg on top of each and bake for 25-30 minutes until golden brown.
  • Remove from the oven and allow to cool down on the baking sheet

Candied bacon

  • Place the bacon on a baking sheet lined with baking paper and sprinkle with castor sugar.
  • Bake for 15 minutes at 180°C or until crisp and caramelised.
  • Remove the bacon from the baking paper and set aside to cool down.

Chocolate drizzle

  • Place the white chocolate in a heatproof bowl set over a saucepan of simmering water. Allow to melt, stirring occasionally until completely melted.
  • Decant the chocolate into a small mixing bowl, using a spatula or spoon to scrape off the sides of the heatproof bowl.
  • Repeat the process with the dark/milk chocolate.
  • Using a spoon, drizzle the dark/milk chocolate over the nests, followed by drizzles of the white chocolate.

  • Top the nest breads with the bacon and serve.
