Easy pork tostada

Tostada? Say what? Think of a Mexican burrito, crossed with a taco, crossed with a quesadilla, piled with #JustDelicious things and slightly toasted! Just trust us – and get that fiesta flair back in your kitchen!

Ingredients

500g Eskort Pulled Pork

4 small tortillas

15ml (1T) olive oil

1 can black beans, drained

1 can kernel sweetcorn, drained

2 small red cabbages, shredded

100ml (2/5c) sour cream

salt and ground black pepper

small handful fresh coriander, chopped

 

Method

  • Heat the pork according to the package instructions and set aside.
  • Toast the tortillas in a dry pan, remove from the heat and set aside.
  • Heat the oil in a small pan and fry the black beans for 2-3 minutes over high heat. Remove from the heat and set aside.
  • Top each tortilla with some pork, beans, corn, cabbage and sour cream. Season with salt and pepper and garnish with coriander.
  • Serve immediately.
