ESKORT: Green beans with bacon & feta

Not your usual boring old green beans these. Our #JustDelicious twist is a winner!

It’s greens with a little style and will have you coming back for more. This dish is great as a light lunch or dinner and can also be used as a side salad.


500 g green beans, topped and tailed

15 ml butter

1 packet Eskort Streaky Bacon, cut into pieces

12 cherry tomatoes, halved

100 g feta cheese, crumbled

100 g flaked almonds

60 ml olive oil

juice of 1 lemon


freshly ground black pepper


  • Bring a pot of salted water to the boil, add the green beans and cook for 5 minutes (to retain the bright green colour and crunchiness).
  • Drain immediately and set aside to cool.
  • In a frying pan heat the butter and fry the bacon until crispy. Remove from the pan and set aside.
  • Add the tomatoes to the pan and fry until the skin is blistered. Remove and set aside.
  • In a small frying pan, toast the almonds until aromatic and just browning. Remove and set aside.
  • To assemble, toss together the beans, bacon, tomatoes, feta and almonds in a bowl.
  • Drizzle with the olive oil and lemon juice and season with salt and pepper.
  • Toss to coat well and serve.
