ESKORT: Tuna wraps

10ml (2t) olive oil

4 Eskort Smoked Viennas

1 tin (170g) shredded tuna, in water

50ml mayonnaise

5ml (1t) lemon juice

pinch of paprika

50g corn kernels

¼ cucumber, chopped

½ red pepper, chopped

1 stick celery, finely sliced


freshly ground black pepper

50g lettuce, shredded

2 tortillas

handful of fresh chives, chopped, to garnish


  • Heat the oil in a frying pan and fry the viennas for 1-2 minutes until heated through.
  • Remove from the heat and allow to cool slightly before cutting into pieces.
  • Drain the tuna and mix with the mayonnaise, lemon juice and paprika.
  • Stir in the smoked viennas, corn, cucumber, red pepper and celery and season with salt and pepper.
  • Divide the lettuce and filling between the tortillas, placing everything just off-centre.
  • Wrap the unfilled half around the filling and tuck in one end to secure. Garnish with the fresh chives.
