Gin & Tonic Pork Chops

Salute summer with this #JustDelicious Gin and Tonic Pork Chops recipe. Great for lazy hot summer days – who knew G&T could be handy in so many ways for conquering the heat!


Pork Chops

4 Eskort Pork Chops

olive oil

zest and juice of 1 lemon

125ml (½c) gin

200ml (4/5c) tonic water

salt and freshly ground pepper


80ml (?c) olive oil

zest and juice of 1 lime

80ml (?c) maple syrup

1 green chilli, finely chopped

salt and freshly ground pepper


fresh mint

1 bunch spring onions, chopped

500g rainbow carrots

To Serve

2 handfuls baby spinach

flat-leaf parsley, to garnish



Pork chops

  • In a meat tray, combine the oil, lemon zest and juice, gin and tonic water.
  • Place the pork chops in the meat tray, cover with the marinade and refrigerate for 20-30 minutes.
  • Remove the chops from the fridge and season with salt and pepper.
  • In a pan over moderate heat, fry the chops for 8 minutes each side.


  • Mix the oil, lime zest and juice, maple syrup, salt, pepper and chilli.


  • Combine the mint, spring onions and carrots in a large bowl and toss with the dressing.

To serve

  • Serve the chops and salad on a bed of baby spinach and garnish with the parsley.
