Ham & pea pasta salad

250g Eskort Mini Picnic Ham, diced

500g shell pasta

250g frozen peas, defrosted

150g cheddar cheese, diced

½ onion, diced

45ml (3T) mayonnaise

45ml (3T) cream

zest and juice of ½ a lemon

salt and freshly ground black pepper


  • Bring a pot with lightly-salted water to the boil and cook the pasta until tender, about 12 minutes. Drain and set aside to cool.
  • Bring a small pot of water to the boil, add the peas and cook for 1 minute. Drain and set aside.
  • Add the peas, ham, cheese and onion to the pasta.
  • Whisk the mayonnaise, cream, lemon zest and juice together and add to the pasta.
  • Season the salad with salt and pepper and toss everything to coat.
  • Cover and refrigerate until completely chilled before serving.
