Hearty tomato sauce

One Sauce Fits All

This #JustDelicious homemade tomato sauce is an ideal base for a variety of wholesome meal options!


1kg ripe tomatoes, cut into quarters

salt and pepper

60ml (¼c) olive oil

2 large onions, chopped

5 carrots, grated

1 bunch celery, chopped

60ml (4T) chopped fresh thyme

4 cloves garlic, chopped

2 cans (410g each) tomato purée

200g tomato paste

60ml (4T) vegetable stock

250ml (1c) merlot (or any dry red wine)


  • Preheat the oven to 200°C.
  • Put the tomatoes in a large ovenproof dish, season with salt and pepper and bake for 10 minutes.
  • While the tomatoes bake, heat the olive oil in a large pot over a high heat.
  • Fry the onions, carrots, celery, thyme and garlic until they start to brown.
  • Remove the tomatoes from the oven and add to them to the pot, along with the rest of the ingredients.
  • Lower the heat and allow to simmer for 10 minutes.
  • Season with salt and pepper to taste.
