Lemon basil pork chops

30ml (2T) olive oil

100g fresh basil, chopped

zest of 1 lemon

juice of 1 lemon

45ml (3T) minced garlic

salt and freshly ground pepper

4 Eskort Pork Chops Rindless

olive oil for frying


  • Add the olive oil, basil, lemon zest, lemon juice, garlic and salt and pepper to a bowl and stir until combined.
  • Brush both sides of the pork chops with the lemon and basil mixture and set aside. Allow the chops to marinate for about 20 minutes.
  • Heat oil in a frying pan and fry the chops for about 4-5 minutes a side or until cooked through.
  • Remove from heat and allow to rest for a few minutes before serving.
  • Serve chops with a side salad or veggies of your choice.
