Magical Bacon Bars

These #JustDelicious chocolate, nut and coconut bars with our secret ingredient, bacon, will disappear so quickly you’d better make a double batch!


200g unsalted butter

65g sugar

5ml (1t) vanilla essence

1 large egg yolk

375g flour

2,5ml (½t)  salt

120g Eskort Bacon Cutts, finely diced

300g desiccated coconut

350g chocolate discs, roughly chopped

125g salted roasted almonds, chopped

1 can (360g) caramel

1 can (385g) condensed milk


  • Preheat the oven to 180°C and line a shallow baking tray or casserole dish with baking paper. Grease with nonstick spray.
  • In a pan, add the butter and heat over medium heat until lightly browned. Stir occasionally.
  • Remove from the pan and scrape into a large mixing bowl. Cover and put in the freezer until just solid.
  • In a separate bowl, whisk together the sugar, vanilla essence and egg yolk. Add the butter and beat together until well blended.
  • Add the flour and salt and beat until crumbs start to form. Put the crumbs on the baking tray and press down flat to cover the whole tray.
  • Bake for 20-25 minutes until the crust is slightly browned and set.
  • Fry the bacon in a pan over medium heat until browned and crisp. Remove the bacon from the pan and allow to cool.
  • In a large bowl, toss together the coconut, chocolate chips, almonds and bacon.
  • In another bowl whisk together the caramel and condensed milk. Pour about two-thirds of the caramel mixture on top of your baked crust.
  • Put the coconut and bacon mixture on top of that, spread out and press down in an even layer. Drizzle the rest of the caramel sauce over to cover evenly.
  • Put back in the oven and bake for 35-40 minutes until browned on top. Remove from the heat and allow to cool to room temperature.
  • Put in the fridge for about an hour until firm and set.
  • Carefully remove from the tray and peel off the paper. Cut into bars and serve.
