Mediterranean-style hot pot

15ml (1T) olive oil

8 Eskort Pork Sausages

1 onion, chopped

200g baby tomatoes

1 each red, green and yellow pepper, deseeded and cut into pieces

2 celery sticks, sliced

2 garlic cloves, finely chopped

5ml (1t) dried thyme

5ml (1t) dried oregano

5ml (1t) paprika

15ml (1T) red wine vinegar

15ml (1T) flour                                                                                    

500ml (2c) chicken stock

1 tin (400g) chopped tomatoes

salt and freshly ground pepper

flat-leaf parsley, chopped 


  • Heat the oil in a frying pan, add the sausages and cook until browned all over.
  • Remove the sausages from the pan and set side.
  • Add the onion, baby tomatoes, peppers and celery to the pan and fry until softened.
  • Add the garlic, thyme, oregano and paprika and fry for another 2-3 minutes.
  • Add the vinegar and flour and cook for 1-2 minutes while stirring.
  • Return the sausages to the pan.
  • Stir in the chicken stock, chopped tomatoes and season with salt and pepper.
  • Bring to a simmer and cook for 15 minutes until the sauce has reduced and thickened.
  • Sprinkle some parsley over and serve warm with crusty bread to soak up all the gravy.
