Minestrone soup & pizza dogs

Nutritious, crowd-pleaser, traditional, comforting . . . our #JustDelicious minestrone served with a pizza dog is a winter dinner winner. Bellissima!

Ingredients

60ml olive oil

1 onion, chopped

2 garlic cloves, finely chopped

2 carrots, peeled and sliced

2 sticks celery, sliced

2 potatoes, peeled and cubed

6 baby marrows, sliced

60ml (¼c) tomato paste

5ml (1t) origanum

5ml (1t) thyme

1 bay leaf

1 can chopped tomatoes

2l (8c) vegetable stock

salt and ground black pepper

1 can cannellini beans

Pizza dogs

4 Eskort Smoked Viennas

15ml (1T) oil for frying

4 hot dog rolls

butter for rolls

60g mozzarella cheese, grated

200g baby tomatoes, sliced

small handful fresh basil

Method

  • Heat the oil in a large pot and add the onions, garlic, carrots, celery, potatoes and baby marrows and fry for 8-10 minutes, stirring regularly.
  • Add the tomato paste, origanum, thyme and bay leaf and stir.
  • Add the tomatoes and stock and stir to combine.
  • Season with the salt and pepper, cover partially and simmer for 15-20 minutes until the vegetables have just softened.
  • Remove the lid, add the beans and simmer for 12-15 minutes until the beans have softened.  Remove from the heat.

Pizza dogs

  • Heat the oil in a frying pan and fry the viennas until cooked. Remove from the heat and set aside.
  • Slice open and butter the rolls. Assemble pizza dogs, each with a smoked vienna, some grated mozzarella, a few slices of tomato and fresh basil.
  • Remove the bay leaf from the soup and serve warm with the pizza dogs.
