Open chicken braai burger sarmie with roasted red pepper and cottage cheese

These open sandwiches with their smoky, creamy flavour are #JustDelicious. 


Roasted red pepper

1 red pepper

Chicken braai burgers

olive oil

500g Eskort chicken braai burgers

salt and freshly ground pepper

To serve

60ml (¼c) cottage cheese

2 slices low-GI bread

5g basil

5g chives, chopped

5g rocket

30ml (2T) olive oil, for cooking


Roasted red pepper

  • Set the oven to 200? and roast the red pepper until the skin is charred on all sides.
  • Remove from the oven and put in a small plastic bag to sweat for 10 minutes.
  • Remove the pepper from the bag and peel off the skin.
  • Cut the pepper in half, then remove the seeds and stem.

Chicken braai burgers

  • While the red pepper is roasting, heat a frying pan over a moderate heat.
  • Add olive oil and fry the burgers until golden on both sides.
  • Season with salt and pepper, then set aside.

To serve

  • Generously spread the cottage cheese on both slices of bread.
  • Top each slice with a chicken braai burger and half a roasted red pepper.
  • Garnish with the basil and chives. Drizzle olive oil over and serve.

TIPS: For a low-carb option, substitute the low-GI bread for low-carb bread or use two crisp lettuce leaves.

You can also serve with your choice of regular or sweet potato fries.
