Pasta with pork strips and salsa verde

Preparation: 5 min | Cooking: 30 min | Serves 6

Skip the store-bought salsa this week and indulge in this Italian favourite.

Ingredients 

Pasta

600g pasta shells

1kg Eskort pork strips

10ml olive oil

salt and pepper

Salsa verde

125ml Italian parsley

125ml basil

65ml fresh mint

65ml chives

65ml spring onion

65ml coriander

3 garlic cloves

250ml olive oil zest and juice of one lemon

salt and pepper

To serve

A handful baby spinach (optional)

Method

  • Preheat the oven to 180ºC and grease a baking sheet with nonstick spray.

Pasta

  • Cook pasta shells according to pack instructions – about 20 minutes.
  • Put the pork strips on the prepared baking sheet, drizzle olive oil over and season with salt and pepper. Roast for 10 minutes until cooked.

Salsa verde

  • Add all the ingredients to the bowl of a food processor and pulse to the desired consistency.

To serve

  • Dress the cooked pasta with the salsa verde, add pork strips and top with a handful of baby spinach (if using).
