Pulled Pork Mac ’n Cheese Bites

This people pleasing, kiddie friendly and #JustDelicious dish is quick to whip up and even quicker to disappear into hungry tummies!

Ingredients:

500g macaroni
30ml (2T) butter
30ml (? Measurement) flour
500ml (2c) cream
400g Eskort Pulled Pork
200ml BBQ sauce
200g (? c) Cheddar cheese
200g (?c) white Cheddar cheese
60g (¼c) breadcrumbs
salt
freshly ground black pepper

Method:

Preheat the oven to 180°C. Cook the macaroni according to the package instructions, drain and set aside.

  • Melt the butter in a saucepan and add the flour gradually, stirring until combined. 
  • Add the cream and continue cooking, stirring continuously until the sauce starts thickening.
  • Remove from the heat and add half of the two cheeses, season with salt and pepper and return to heat.
  • Continue cooking on low heat until the cheese has melted and the sauce has thickened. Remove from the heat and set aside.
  • Mix the pulled pork and BBQ sauce together and set aside.
  • In a large casserole dish, mix together the macaroni, pulled pork mixture and cheese sauce. 
  • Mix together the remaining cheese and the breadcrumbs and sprinkle on top. Bake for 20-25 minutes until the cheese has melted and turned golden. 
  • Remove from the oven and allow to cool slightly before cutting into bite-size squares for serving.
