Pulled pork sandwiches

There’s no reason to spend hours in the kitchen when our ready-to-use pulled pork is so convenient and adds #JustDelicious flavour to a lunchtime treat.

Ingredients

1 small white cabbage, shredded

1 small purple cabbage, shredded

2 carrots, peeled and shaved

salt and freshly ground black pepper

125ml (½c) mayonnaise

500g Eskort Pulled Pork

80ml (?c) BBQ sauce

4 wholewheat rolls, ciabatta rolls or baguettes

butter, for rolls

Method

  • In a bowl, mix together the shredded cabbages and shaved carrots with the salt, pepper and mayonnaise to make a simple coleslaw. Set aside.
  • Heat the pulled pork according to packet instructions, then toss through the BBQ sauce and set aside.
  • Slice open and butter the rolls.
  • Assemble the rolls by adding a generous layer of pulled pork and a dollop of coleslaw to each.
  • Quick, easy and delicious - yum!
