Roasted bacon-stuffed mushrooms

Spray and Cook (nonstick cooking spray)

4 large brown mushroom steaks

salt and ground black pepper

200g Panko breadcrumbs

15ml olive oil

small handful chives, chopped and extra for garnish

5ml lemon zest

5ml lemon juice

100g goat’s cheese, crumbled

1 packet Eskort back bacon, roughly cut


  • Preheat the oven to 200°C.
  • Spray an oven baking tray with Spray and Cook (nonstick cooking spray)
  • Place the mushrooms on the tray, stem side up, and season with salt and pepper.
  • Mix half the breadcrumbs with the olive oil and set aside.
  • Mix the remaining breadcrumbs with the chives, lemon zest, lemon juice and goat’s
  • cheese.
  • Evenly divide this breadcrumbs mixture between the 4 mushrooms.
  • Top each one with the breadcrumbs and oil mixture and a few pieces of back bacon.
  • Bake for 15-20 minutes until the bacon is cooked and breadrumbs topping is crispy.
  • Garnish with extra chopped chives and serve warm.
