Roasted chickpeas with crispy bacon and feta cheese

Chickpeas aren’t just good for making hummus. The combination of spicy chickpeas with crispy bacon is a match made in heaven as the flavours complement each other beautifully. Here DRUM food assistant Carmen Petersen shows you how to make this dish, which has become a favourite in her home. 


dash of olive oil

1 packet (200g) Eskort diced bacon

1 can (400g) chickpeas, drained

5ml (1t) paprika or cayenne pepper

250ml (1c) cherry tomatoes

salt and pepper to taste

1 handful sliced spring onions

1-2 rounds feta cheese


  • Preheat a pan till hot, add a dash of oil and fry the bacon until crisp.
  • Add the chickpeas and stir-fry until lightly toasted. Season with paprika or cayenne pepper and remove from the pan.
  • In the same pan, add a little more olive oil if needed and stir-fry the tomatoes till they just start to burst, season with salt and pepper to taste.
  • Add the warm tomatoes to the chickpea and bacon mixture, sprinkle the spring onions and feta over and serve warm.
