Roasted red onion russian roll with lemon cottage cheese

Zesty cottage cheese and roasted red onion take this Russian roll from street to chic.


Russian roll

500g Eskort Smoked Russians

15ml (1T) harissa spice

2 red onions, quartered

45ml (3T) olive oil

zest and juice of 1 lemon

1 garlic clove, sliced

15ml (1T) chopped thyme

Lemon cottage cheese

250ml (1c) smooth cottage cheese

zest and juice of 1 lemon

freshly ground black pepper

pinch of salt


Russian roll

  • Preheat the oven to 190°C.
  • In a mixing bowl, combine the harissa spice, onions, olive oil, lemon zest and juice, garlic and thyme.
  • Transfer the onion mixture to a baking sheet lined with baking paper and bake for 15 minutes.
  • Fry Russians in the remaining oil in a large pan over moderate heat, about 5 minutes each side.

Lemon cottage cheese

  • Place the ingredients in a mixing bowl and mix until well combined.
  • Assemble the rolls starting with the Russians, add some roasted onions and finish with cottage cheese.
