Rustic ham and potato bake

Take me back to the good old days! This #JustDelicious rustic ham and potato bake does exactly that – a little nostalgia with a lotta delicious!


15ml (1T) butter

2 onions, sliced

4 medium potatoes, sliced (keep the skins on)

salt and freshly ground pepper

250g Eskort Mini Picnic Ham, thinly sliced

30ml (2T) Dijon mustard

250ml (1c) chicken stock

200ml (1c) cream

10ml Maizena

60g white cheddar cheese, grated

handful of fresh parsley, chopped, to garnish



  • Preheat the oven to 180°C. Grease a shallow baking or casserole dish with nonstick spray.
  • Heat the butter in a pan and fry the onions until just softened, then remove from the heat and set aside.
  • Put half the potatoes in an even layer in the prepared baking dish, then season lightly with salt and pepper.
  • Cover the potatoes with half the onions, then a layer of mini picnic ham.
  • Spread a thin layer of mustard on top of the ham, then cover with the remaining onions. Layer the rest of the potato slices on top in an even layer and season with salt and pepper.
  • Pour the chicken stock over and bake for 35-40 minutes. Mix the cream and Maizena, making sure there are no lumps.
  • Remove the potatoes from the oven, pour the cream over and top with grated cheddar cheese.
  • Return to the oven and bake until the cheese has melted and the top is golden brown (15-20 minutes).
  • Sprinkle with parsley and serve immediately.
