Saucy Bacon & Tomato Spaghetti

500g spaghetti

30ml (2T) olive oil

1 packet Eskort Diced Bacon

2 cans (410g each) chopped tomatoes

salt and freshly ground pepper

10ml (2t) balsamic vinegar

200g black olives, pitted and halved

1 small bunch fresh basil, roughly chopped

100g Parmesan cheese, grated


  • Bring a large saucepan of salted water to the boil and cook the pasta according to the packet instructions.
  • In a frying pan, heat the olive oil and fry the bacon until cooked. Remove from the heat and set aside.
  • To the same pan add the tomatoes, salt, pepper and balsamic vinegar and bring to a simmer.
  • Allow to simmer until the sauce has slightly reduced and thickened, then add the olives and cook for another minute or two.
  • Add the bacon back to the pan and stir to combine and heat through.
  • Remove from the heat and add the basil. Stir through. Add the spaghetti and toss together.
  • Serve warm with a generous sprinkle of Parmesan cheese.
