Sausage & broccoli flatbread

Ingredients

375g Eskort Gold Medal Pork Sausages

300g broccoli florets

4 readymade naan breads

375ml tomato and basil pasta sauce

100g (2/5c) mozzarella cheese, grated

45ml (3T) olive oil

salt and ground black pepper

handful of fresh rocket for garnishing

Method

  • Preheat the oven to 200°C.
  • Bring a pot of salted water to the boil and cook the broccoli for 2 minutes. Drain and set aside.
  • Spread out the naan breads on a baking sheet and top each with a few tablespoons of tomato and basil pasta sauce.
  • Remove the sausage meat from the casings. Break the meat into pieces and divide evenly among the naan breads.
  • Top each bread with some broccoli florets then sprinkle with mozzarella cheese, dividing these evenly among the breads.
  • Drizzle the breads with a little olive oil and season with salt and pepper.
  • Bake for 10-15 minutes until the cheese has melted and the meat is cooked.
  • Serve warm garnished with rocket.
