Sausage, pea & egg-fried rice

A firm crowd favourite, our #JustDelicious egg-fried rice is deceptively simple but packs a punch of flavour!


6 Eskort Chicken Viennas, sliced

400g (2c) rice

25g (2T) butter

½ onion, chopped

2 eggs beaten

10ml (2t) soy sauce

100g frozen peas

100g (?c) corn kernels

salt and ground black pepper


  • Cook the rice according to the packet instructions, remove from the heat and set aside.
  • Heat the butter in a large frying pan and sauté the onion until softened.
  • Add the viennas and cook for 2-3 minutes.
  • Add the eggs and, using a fork, scramble while cooking. Season with salt and pepper.
  • When the egg is cooked, add the rice and mix through, adding more butter if needed.
  • Add the soy sauce, peas and corn and fry for another 5 minutes.
  •  Serve warm with a sprinkling of spring onions.
