Tramezzini pizzas

A great fun meal for the whole family where you can let the little ones help to assemble their own pizzas.

Ingredients

350g Eskort Mini Frikkadels

olive oil                      

Pizza bases

3 loaves tramezzini

125ml (½c) tomato puree

120ml sundried tomato pesto

100g tomato paste

20ml (2t) fresh chives

Caramelised onions

6 red onions

250ml (1c) vegetable stock

60ml (¼c) brown sugar

50g butter  

150ml water

Topping

250g mozzarella cheese

handful of fresh rocket

olive oil

salt and pepper 

 

Method

  • Preheat the oven to 180°C.
  • Put the frikkadels in an ovenproof dish and drizzle the olive oil over. Bake in the oven for 15 minutes or until the frikkadels are golden.

Pizza bases

  • Slice each tramezzini in half and put on a baking tray lined with baking paper.
  • Mix the tomato puree, sundried tomato pesto, tomato paste and fresh chives together and generously spread on each of the tramezzini bases.

Caramelised onions

  • Slice the onions in half and place them face down in a frying pan. Add the vegetable stock, brown sugar, butter and water to the pan so the onions are covered, then close the pan with baking paper to cook. Cook the onions until the water has evaporated and the onions have caramelised.

Topping

  • Slice the mozzarella in thick slices and layer each pizza base with the mozzarella cheese, frikkadels and caramelised onions and bake in the oven until the cheese melts and turns golden.
  • Serve with the fresh rocket, olive oil, salt and pepper
