Turkish frikkadel kebabs

Packed with flavour, Eskort’s pork mini frikkadels are perfect for party platters. DRUM`s food assistant Carmen Petersen shows you how to give these frikkadels a Turkish flavour and serve them in a wrap.

Ingredients

SAUCE

oil

5ml (1t) cumin seeds

1 can (400g) chopped tomatoes

65g tomato paste

20 pitted green olives

15ml (1T) dried oreganum

FRIKKADELS

200ml cake flour mixed with 5ml cumin and about 30ml sesame seeds

650g Eskort pork mini frikkadels

wooden skewers

TO SERVE

8 tortillas

250 ml creamy yoghurt

2 lemons cut into wedges

Method

Sauce

  • Heat a splash of oil in a saucepan and fry the cumin seeds till fragrant.
  • Add the tomatoes and tomato paste and olives and heat for about 5 minutes.
  • Season with salt and pepper and remove from heat.

Frikkadels

  • Roll the frikkadels in the cake flour mix and fry in a little oil till brown.
  • Remove from the pan. 
  • Thread 3 frikkadels on each skewer.

To serve

  • Heat the tortillas in a pan or in the microwave till just warm and flexible.
  • Serve the frikkadel kebabs with the sauce and warm tortillas with yoghurt and lemon wedges.
