Apple ring

Serves 10

2 packets (80 g each) greengage jelly

500 ml (2 cups) boiling water

4 green apples, peeled and grated

1 can (000 g) crushed pineapple, drained

15 ml (1 tablespoon) lemon juice

10 red glace cherries, halved

50 g (½ packet) pecan nuts, chopped

In a large bowl mix together the jelly and boiling water and stir until the jelly has dissolved. Add the grated apple, pineapple, lemon juice, cherries and nuts and mix well. Place in a greased ring-shaped cake tin or plastic container and refrigerate overnight or until firm. To remove from the pan, dip the base of the tin briefly in hot water and turn over onto a serving plate. Decorate with shredded lettuce and fresh strawberries.
