Baked potato with cottage cheese salad

Serves 2

2 large potatoes

5 ml (1 teaspoon) salt

5 ml (1 teaspoon) oil

90 ml (6 tablespoons) chunky cottage cheese

3 gherkins, chopped

1 tomato, chopped

Salt and pepper, to taste

Preheat the oven to 180°C. Prick each potato with a fork and rub well with salt and oil. Wrap each in aluminium foil and put in the oven. Bake for 45-60 minutes until cooked. Cut a cross on top of each potato and press the sides so that the flesh comes out at the cross. Mix the cottage cheese, gherkins, tomato and seasonings, and spoon onto the potatoes. Serve immediately.
