Baked rice pudding

Ingredients you will need

2 cups (500ml) cooked rice

3cups (750) full cream milk

6 eggs

1/3 cup (80) margarine, melted

1 tablespoon (15ml) orange rind, grated

1 teaspoon (5ml) cinnamon

½ teaspoon (3ml) ground nutmeg

½ cup (125ml) raisins


Preheat the oven. Grease a baking dish with margarine. Combine the rice and milk in a bowl. Beat the eggs, margarine, orange rind, cinnamon and nutmeg together. Pour over the rice and add the raisins. Mix well and pour into the baking dish. Bake for 40 minutes until it is golden brown and set.

Move tip: serve warm or at room temperature, with custard.
