Banana Bread

Banana Bread V1 E-MAIL


2 large eggs

¦ 250g(1¼ cups) castor sugar

¦ 125ml (½ cup) sunflower oil

¦ 5ml (1 teaspoon) vanilla extract

¦ 65ml (¼ cup) natural yogurt

¦ 150g (1½ cups) walnuts, chopped

¦ 3 large ripe bananas, mashed

¦ 200g (1 cups) cake wheat flour

¦ 2ml (¼ teaspoon) salt

¦ 5ml (1 teaspoon) bicarbonate

of soda

¦ 3ml (½ teaspoon) ground



Preheat the oven to 180°C. Grease

and line base of a large 13.5cm x

23.5cm loaf pan.

Beat eggs and sugar together in

a large bowl with electric or rotary

beater for 10 minutes or until very

thick and pale. The mixture should

form a ribbon when the beater is lifted.

Reduce the speed to low and beat in

the oil in a steady stream.

Mix in vanilla, yogurt and walnuts.

Add mashed bananas. Sift together

flour, salt, bicarbonate of soda and

cinnamon in a large bowl. Pour

the banana mixture into the dry

ingredients and fold gently.

Pour mixture into loaf pan and bake

for 1¼ hours or until a skewer comes

out clean when inserted into cake.

Cool in pan for 10 minutes and turn

out onto a rack to cool completely.
