Banana muffins

¦ 360g (3 cups) cake wheat flour

¦ 5ml (1 teaspoon) bicarbonate of soda

¦ 5ml (1 teaspoon) salt

¦ 3ml (½ teaspoon) baking powder

¦ 400g (2 cups) sugar

¦ 250ml (1 cup) sunflower oil

¦ 3 eggs

¦ 5ml (1 tablespoon) vanilla extract

¦ 4 ripe bananas, peeled and coarsely mashed


Preheat the oven to 180°C.

Line two standard-size muffin tins with paper liners.

In a medium bowl, whisk together flour, bicarbonate of soda, salt and baking powder.

Set the mixture aside.

In a large bowl, whisk together sugar, oil, eggs and vanilla.

Gently stir in bananas.

Add dry ingredients to the banana mixture.

Using a large metal spoon, mix batter until just blended.

Fill prepared muffin cups about two-thirds full.

Bake for 25 minutes or until a skewer inserted into the centre comes out clean.

Transfer muffins to a rack and cool slightly before removing and serving.
