Bean and mutton hotpot

Livhuwani Dagada of Thohoyandou sent in these great recipes. Move! tested them and the result is a winter feast that is easy to make.

Serves 4

500 g stewing mutton, cubed

1 onion, chopped

30 ml oil

1 clove garlic, chopped

250 ml (1 cup) water

500 g frozen Vegetable and Bean Combo

30 ml (2 tablespoons) margarine

salt and pepper to taste

Fry the mutton and onion in the oil until the meat is brown and the onion soft. Add the garlic and fry for one minute. Add the water, bring to the boil and cover. Simmer slowly for two to three hours (add more water if required) until the meat is very tender. Add the Vegetable and Bean Combo, margarine and seasoning, and simmer uncovered for 20 minutes. Serve on rice or with wholewheat bread and salad.
