Broccoli and chicken stir-fry

Serves 2

2 skinless chicken breasts, sliced thinly

Salt, pepper and chicken spice to taste

30 ml (2 tablespoons) oil

1 onion, sliced into thin wedges

2 garlic cloves, chopped

500 ml (2 cups) broccoli florets

45 ml lemon juice 500 ml (2 cups) spinach, shredded   Method

Season the chicken with salt, pepper and chicken spice, and set aside. Heat the oil until hot, and fry the onion over high heat until soft. Add the chicken pieces and fry over high heat until golden brown and cooked. Add the broccoli, and fry until just cooked. Add the garlic and lemon juice, and fry for 30 seconds. Add the spinach, fry until wilted and serve immediately. Serve on its own or over cooked rice or noodles.
