Buttermilk pudding

Livhuwani Dagada of Thohoyandou sent in these great recipes. Move! tested them and the result is a  feast that is easy to make

125 g margarine

200 ml (3/4 cup + 4 teaspoons) sugar

2 large eggs

250 ml (1 cup) self-raising flour

1 ml salt

500 ml (2 cups) buttermilk

250 ml (1 cup) fresh milk

Preheat the oven to 160°C and grease or spray an ovenproof dish. Beat the margarine and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift the dry ingredients together. Mix the buttermilk with the fresh milk and add to the margarine mixture with the dry ingredients. Mix well. Pour into the prepared dish and bake for 45 minutes or until the pudding is cooked.

Serve with custard.
