Caramel crisps

Makes 100 biscuits

250 g (1 small brick) margarine, softened

250 ml (1 cup) sugar

½ can condensed milk

750 ml (3 cups) cake flour, sifted

5 ml (1 teaspoon) baking powder

pinch of salt

5 ml (1 teaspoon) vanilla essence

Preheat the oven to 180°C and grease a few baking trays. Cream the butter and sugar until light and fluffy. Mix in the condensed milk. Sift the dry ingredients and add to the sugar mixture. Add the vanilla essence and mix well to form a dough. Roll into small balls and place on a greased baking tray. Leave enough room between the balls, because the biscuits will spread when they bake. Flatten the dough balls slightly and bake for 12-15 minutes until golden brown. Store in an airtight container.
