Cheesy Chicken and broccoli

  1. 1.     Ingredients 

(Serves 8)

1 chicken

750 g broccoli

250 ml mayonnaise

1 can (425 g) mushroom soup

5 ml (1 teaspoon) curry powder

juice of ½ lemon

500 ml (2 cups) grated cheese


Preheat the oven to 160°C. Debone the chicken and cut the meat into small pieces. Cook the broccoli in salted water until just tender. Drain and mix with the chicken. Spoon into an ovenproof dish. Mix the mayonnaise, soup, curry powder and lemon juice and pour over. Sprinkle cheese over and bake for 30–40 minutes until golden brown. Serve with bread and salad.
