Chicken Macaroni and cheese

This quick and tastey meal is a great twist to an old family favourite


  • 240g uncooked macaroni
  • 4 chicken breasts - cooked and shredded
  • 60 g butter
  • ½ cup flour
  • 4 cup milk
  • 1 cup grated cheddar
  • A pinch of nutmeg
  • 1 cup Grated cheddar for topping
  • 4 Slices of toast, crumbled into fine crumbs


Preheat oven to 180ºC

Boil the pasta in salted water and set aside.

Melt the butter in a medium sized saucepan.  Remove from heat and add the flour, mixing it to make a paste. Add half of the milk, and whisk until incorporated.

Tip: When adding the milk, rather add in smaller amounts to avoid lumps.

Return the pot to medium heat and whisk until sauce thickens.

Add the rest of the milk, whisking continuously allowing the sauce to thicken and boil. Remove from heat, add the cheese and nutmeg and season to taste.

Add the macaroni, chicken and cheese sauce together in an oven-proof dish. Top with grated cheese, breadcrumbs

Bake until golden for approximately 30 minutes.

*tip: sneak a cup of frozen veggies in (eg : frozen peas , corn and dices carrots ) this makes for a balanced meal and your children won't mind eating their veggies
