Chocolate mouse trifle

¦ 500g (1 packet) chocolate cake mix

¦ 160ml (2/3 cup) oil

¦ 3 large eggs

¦ 190ml (¾ cup) milk


¦ 1 tub (500ml) store-bought chocolate mousse

¦ 500ml (2 cups) thick cream

¦ 100g white chocolate, melted

¦ Store-bought mini chocolate meringues,



Preheat the oven to 180°C.

Grease and line a 30cm by 30cm square cake tin.

Make sponge cake according to instructions on the package.

Spoon into prepared tin.

Bake for 30 to 35 minutes or until the skewer comes out clean when inserted into cake.

Remove from the oven and cool on a wire rack.

Cut the cake into small squares and then press onto the bottom of serving glasses.

Cover cakes with chocolate mousse to make a generous layer.

Whisk cream and white chocolate in a bowl until soft peaks form.

Spoon over chocolate mousse and refrigerate until serving.

Before serving, decorate with meringues if desired.

Sprinkle with some grated chocolate.

All leading supermarkets will have readymade cake mixes and chocolate mousse.
