
Ingredients:
¦ 4 chicken drumsticks and 4 chicken thighs
¦ Salt and pepper to taste
¦ 200g button mushrooms, sliced in half
¦ 1 pkt (40g) brown onion soup powder
¦ 250ml (1 cup) hot water
¦ 1 sachet (50g) tomato paste
¦ 250ml (1 cup) chutney
¦ 250ml (1 cup) mayonnaise
¦ 125ml (½ cup) chopped fresh oregano
Instructions:
Preheat the oven to 180°C. Season chicken pieces
with salt and pepper, place in an ovenproof dish and
add button mushrooms. In a small bowl, mix onion
soup with hot water, add tomato paste, chutney and
mayonnaise. Pour the mixture over chicken pieces,
cover with lid and bake in oven for 1 hour. Remove
lid and add fresh oregano and cook for a further 15
minutes. Serve over rice or samp and beans.
