Cinnamon biscuits

Makes 40 biscuits (depending on size)

500 ml (2 cups) cake flour

10 ml (2 teaspoons) baking powder

12 ml (2½ teaspoons) cinnamon

1 ml (1/4 teaspoon) salt

125 ml (½ cup) soft margarine

180 ml (3/4 cup) sugar

1 egg

45-60 ml (3-4 tablespoons) milk

125 ml (½ cup) cinnamon sugar

Mix the flour, baking powder, cinnamon and salt. Cream the margarine and sugar together until light and fluffy. Add the egg and milk and mix well. Add the margarine mixture to the dry ingredients and mix to form dough. Shape the dough into a long roll and cover with plastic. Refrigerate for 30 minutes. Meanwhile, heat the oven to 180°C and grease a baking tray. Sprinkle some of the cinnamon sugar on a plate. With a sharp knife, cut the dough roll into thin slices. Press each slice into the cinnamon sugar and arrange them (cinnamon sugar sides up) on the baking tray.

Bake for 10 minutes and leave to cool completely. Store in an airtight container.
