Cocoa kit kat cheesecake

¦ 65ml (¼ cup) butter or margarine, melted

¦ 250g (1¼ cups) sugar

¦ 5ml (1 teaspoon) vanilla essence

¦ 2 eggs

¦ 120g (1 cup) cake wheat flour

¦ (1/3 cup) cocoa powder

¦ 3ml (½ teaspoon) baking powder

¦ 3ml (½ teaspoon) salt

¦ 8 (45g) KIT KAT bars

Cheesecake layer:

¦ 3 tubs (175g) cream cheese, softened

¦ 150g (¾ cup) sugar

¦ 3 eggs

¦ 5ml (1 teaspoon) vanilla essence


Heat the oven to 180°C.

Line a 26cm X 17cm lamington baking pan with greased foil, extending the foil beyond the edges of the pan.

Stir together butter, sugar and vanilla essence in a large bowl using a spoon or wire whisk.

Add eggs and mix until well blended.

Stir in flour, cocoa, baking powder and salt.

Mix well and spread the mixture in the prepared pan.

Bake for 25 to 30 minutes or until the brownie starts to pull away from the side of the pan.

Immediately after removing the brownie from oven, place KIT KAT bars over the brownie

surface. (Trim top of brownie to make it level)

For the cheesecake layer: in a large bowl, beat softened cream cheese and sugar until smooth.

Add eggs, one at a time, beating well after each addition.

Stir in vanilla essence.

Spoon cheesecake mixture over the chocolate bars and spread evenly.

Return to the oven and continue baking for 35 to 40 minutes.

Remove from the oven and run a knife along the sides of the pan, to loosen the cake.

Cool for 2 hours.

Refrigerate for at least 3  hours and cut into bars..
