Double cheese and ham quiche

¦ (1 ½ cups) cream crackers (about 1 packet)

¦ 90g butter, melted

¦ 250ml (1 cup) milk

¦ 125ml (½ cup) cottage cheese

¦ 30ml (2 tablespoons) Dijon mustard

¦ salt and freshly ground black pepper

¦ 4 eggs

¦ 250ml (1 cup) grated cheddar cheese

¦ 250ml (1 cup) chopped ham

¦ 4 spring onions, roughly chopped


Preheat oven to 180°C. Place cream crackers in a plastic bag and crush using a rolling pin or blitz in a food processor until fine crumbs.

In a medium bowl, mix together crumbs and melted butter. Press mixture into a 20cm pie pan to form the crust’s bottom and sides; bake for 10 minutes.

In a large bowl, whisk together milk, cottage cheese, mustard, salt, pepper and eggs.

Scatter ½ the cheddar cheese over bottom of crust, pour in egg mixture. Toss remaining ½ cup cheese with ham and spring onions, scatter over eggs, pressing down gently. Bake quiche on middle rack until eggs are set and top is golden, about 50 minutes.
